Grapes are juicy, so if working with a tart or springform pan with removable bottom, set it on a baking sheet lined with parchment to catch spills.

Why is the first adjective big and not the adjective expressing an evaluation or opinion? I thought adjectives expressing the speaker's opinion came first and foremost.
